Kansas City-area entrepreneur Arthur Gilbreath III is preparing to reopen all three of his Nick The Greek franchises after a strategic six-month shutdown that began November 6, 2024. The first location, at 8807 State Line Road in Ward Parkway Mall, will officially reopen on May 13, 2025, with the Lee’s Summit and Olathe stores set to follow.

Gilbreath said the closures provided an opportunity to not only repair facilities and refresh equipment, but to step back and assess long-term goals.

“In business, it’s easy to get lost in survival mode,” Gilbreath explained. “I shut everything down so I could do more than fix equipment. I needed to rebuild a foundation — personally and professionally.”

Gilbreath is operating without investors or partners, assuming full ownership and management across all three stores. “It’s been one of the hardest things I’ve ever done,” he said. “But also the most clarifying.”

The re-openings will feature refreshed interiors, newly trained teams, and a restructured leadership approach. Gilbreath says he’s aiming to bring consistency, quality, and culture back to the forefront.

“This isn’t just about making food,” he added. “It’s about making an impact — and creating a place people want to return to again and again.”
